Here’s a general recipe for making Rempah:

### Ingredients:

- 500g fish fillet (mackerel or any firm white fish), deboned and minced

- 1 medium-sized onion, finely chopped

- 2 cloves garlic, minced

- 1-2 red chilies, finely chopped

- 2 teaspoons ground coriander

- 1 teaspoon ground cumin

- 1 teaspoon ground turmeric

- 2 tablespoons chopped fresh cilantro

- Salt to taste

- Pepper to taste

- 1 egg, beaten

- Breadcrumbs (for coating)

- Oil for deep frying


### Instructions:

1. **Prepare the Fish Mixture**:

   - In a large bowl, combine the minced fish, chopped onion, garlic, and red chilies.

   - Add the ground coriander, cumin, turmeric, chopped cilantro, salt, and pepper. Mix well to combine.


2. **Shape the Patties**:

   - Take a small amount of the fish mixture and shape it into a small patty or round ball. Repeat with the remaining mixture.


3. **Coat with Egg and Breadcrumbs**:

   - Dip each patty or ball into the beaten egg, ensuring it is fully coated.

   - Roll the egg-coated patty in breadcrumbs until well covered. Repeat for all patties.


4. **Heat the Oil**:

   - In a deep frying pan or wok, heat oil over medium heat. The oil should be hot enough for frying but not smoking.


5. **Fry the Patties**:

   - Gently place the patties into the hot oil, a few at a time, making sure not to overcrowd the pan.

   - Fry until golden brown and crispy on both sides, about 3-4 minutes per side.


6. **Drain and Serve**:

   - Remove the fried patties from the oil and place them on a plate lined with paper towels to drain excess oil.

   - Serve hot with a dipping sauce of your choice or as part of a meal.
